Easy Black Bean Tacos

Black beans are such an important ingredient to add to the diet, especially when trying to consume a good source of plant-based protein! I always make sure to have presoaked and precooked beans for quick night meals such as this. You can always use a can; just make sure to get a good quality type (BPA FREE, low sodium).

 

 

 

This kind of meal is fun to eat as a family. Everyone gets to pick what they love and assemble the tacos.

 

 

Make sure to warm up the tortillas before! If you have an open fire it’s the best!

And don’t skip the magic enhancers! Cilantro, lime, hot pepper. It makes all the difference in the world.

 

Easy Black Bean Tacos

 

Ingredients:

  • 2 cups black beans, rinsed
  • 6 garlic cloves, roughly chopped
  • ½ red bell pepper, diced
  • 2 tbsp olive oil
  • 1 tsp cumin powder
  • Salt and pepper to taste
  • ½ cup water

 

To assemble:

  • 8-12 corn or flour tortillas
  • ½ small red onion, sliced
  • 1 avocado, sliced or mashed
  • 6 romaine lettuce leaves, chopped
  • 1 tomato, diced
  • 1 handful cilantro, chopped
  • 1 chili pepper or jalapeno, thinly sliced
  • 2 fresh limes or lemons, cut into wedges

 

Instructions:

1). Heat up two tbsp oil and add the bell peppers. Mix for a minute or two and add the chopped garlic. Mix until nice and golden. Add the cumin and black beans and mix for 30 seconds.

 

2). Add the water, mix, and cover. Cook on low for about 5 minutes to allow the flavors to marry.

 

3). Transfer to a bowl, arrange all the condiments around and serve with fresh lemon or lime.
