Easy Basic Oven Roasted Chicken and Potatoes

We all like to get a break from the hard work in the kitchen once in a while. So how about one pan of protein and starch together?!  This is one of my favorite meals to make on a busy day that works both for lunch or dinner.


1). Place the chicken in a pan, insert the cut potatoes in between.  Sprinkle all the spices and massage the chicken skin.


2). Spread the onion rings, and the tomato, drizzle olive oil, massage skin a little more and put the rosemary on top.


3). Cover very tightly with aluminum foil and place in a preheated 450 degree oven.  After 50 minutes, remove the cover and continue baking until golden brown.
