YOU GUYS!!! I'm sooooo excited for this new tofu recipe!!! Many of you are asking me for ideas of high protein vegan meals, especially for kids! If you or your family are new to tofu, this recipe is going to make the cut! These tofu fingers are so incredibly delicious. Loaded with flavor, bite, and crunch. Super crispy, chewy and amazing for a fun weeknight lunch or dinner. And I can tell you right now, that these are not only for the kids! You and all the adults around you are going to devour them for sure. Give them a try- and come back to tell me how they were. Ok?!



1).Drain the tofu and place on a clean towel, wrap it around and let sit for 10 minutes.

2). Cut each block into 8 sticks (as I show in the video).

3). Prepare the crumbs by placing all the dry ingredients into a food processor. Blitz juts for a few second to keep the texture of the flakes. Transfer to a bowl.

4). In another bowl, put the water and the corn starch along with the salt, and whisk until very well combined.

5). Preheat your oven to 375 F. and start to assemble the sticks.

6). Dip ONE tofu finger into the wet batter, then immediately transfer to the dry bowl, coat the tofu with a help of a fork, then with your fingers, pressing gently to help the crumbs stick, and place on a baking sheet lined with parchment paper. (FEEL FREE TO REPEAT THE COATING PROCESS IF YOU WANT A THICKER katsu).

7). Spray the fingers with avocado or olive oil, and bake for about 30 minutes, flipping them once at the 15 minutes mid point.

8). Remove from the oven and serve with your favorite condiments, Enjoy!!!
