1.5 cups old fashioned oats
2 tbsp chia seeds
2 1/4 cups plant-based milk
2-3 tbsp pure maple syrup
1 cup fresh strawberries, diced
Optional additions: vanilla extract, a sprinkle of cinnamon

1). Combine half the amount of liquids with the chia seeds. Mix in a bowl and set aside. whisk every few seconds. Allow becoming like a gel, about 5 minutes or so.
2). Meanwhile, in a separate bowl, combine the rest of the milk, oats, maple, vanilla, strawberries, and mix. Add the gelled chia seeds and mix well.
3). Cover with plastic wrap and place in the fridge. In the morning, fill up a cup and enjoy with some more fruits on top.
