This quick and easy creamy coconut quinoa porridge is totally going to surprise your taste buds! Ingredients

 

1 cup quinoa

1 cup water

1 cup coconut milk

1-2 ripe bananas, mashed

(coconut cream for later)

Vanilla extract, optional

 

Method

 

1). Place the quinoa in a colander and rinse under running water. Transfer to a pot and pour the liquids. Bring to a boil, cover, and simmer on low for 18-20 minutes.

2). Leave the quinoa in the pot for 5 minutes more.

3). Open the pot, and add the mashed bananas
