For the dressing:
I used to hate kale! But on the other hand, I really wanted to incorporate it to my diet. Once I started chopping it really small, I saw that it was absorbing any flavor and dressing I was using. Especially if it had lemon in it. This salad is hearty, creamy, filling, and so so healthy! I hope you give it a try and enjoy it as much as I do.
1). Prepare the dressing in a Pyrex dish, mix well and set aside.
2). Place all the salad ingredients in a bowl, add the diced tofu, and pour the ¾ the amount of the dressing. Mix and allow to sit for 15 minutes.
3). Just before serving, drizzle the remaining of the dressing and mix.
4). Enjoy with some bread or pita.
