Rice rice rice! Rice is something I grew up eating a few times a week, mainly as a side and sometimes even as a main dish. It absorbs any sauce, it is satisfying and delicious and the list goes on.. But all this rice pleasure has a price! It does not really offer high nutritional value and eating too much of it does not help keep the weight off. There are healthier options to consume on the planet. For example: The cauliflower! What a wonderful vegetable. One of the healthiest foods for our overall health. Packed with vitamin C, fights cancer and inflammation, full of fiber, antioxidants, low in carb and oils. It keeps you full and helps lose weight easily. This delicious cauliflower rice is easy to prepare and hard to stop eating! Next time when you crave some rice try this option and enjoy with no limits!
1 big cauliflower head, washed and cleaned
2 Tbsp olive oil
8 garlic cloves, finely chopped
1 lemon, zested
Salt and pepper to taste
2 Tbsp fresh parsley, chopped
1). Break the cauliflower into florets and place in a food processor. Pulse for a few moments until it becomes like a couscous or rice. (Better to do it in a few batches in order to get an even consistency.)
2). Heat up a wide nonstick pan. Add the oil and garlic and mix for 30-50 seconds until golden.
3). Add the cauliflower rice and mix for a minute or two. Lower to the lowest heat and cover for 10 minutes.
4). Open the lead, add lemon zest, salt and pepper and parsley and serve.
