Instructions

1). Place the rice and lentils in a metal bowl and pour hot boiling water over it. Making sure the water covers it completely. About 1 inch above. Soak for 25 minutes.

2). While rice is soaking,  chop the onion and warm up a wide skillet. Add 2 tbsp olive oil and add the onions. Saute low and slow for about 15-20 minutes. Then season with 1 tsp brown sugar,  1/2 tsp Cinnamon, 1/2 tsp cumin,  a pinch of salt and pepper.  Mix for 1 minute, allow the spices to open and turn off the heat. Set aside.

3)  After 25 minutes,  strain and wash the rice and lentils.  Place in a pot along with the 2 cups water.  1 tbsp oil, salt, and pepper and bring to a boil. Once boiling,  lower the heat, cover, and simmer on low for 45 minutes. Turn off the heat and keep the pot closed for another 10 minutes.

4). Add the sautéed onions to the rice and lentils,  fluff with a fork, and garnish with parsley or cilantro.

Enjoy!
