Serves 4
6 cups chopped kale
1/2 small cabbage, thinly sliced
1/2 red onion, cut into half moons
1/2 cup cashews
1 avocado, sliced
For the dressing:
1/3 cup olive oil
2 tbsp white miso paste
1 tbsp tahini
1 tbsp rice wine vinegar
1 tbsp toasted sesame oil
1 tbsp soy sauce
1 big lemon, squeezed
1 tbsp honey
Salt and pepper to taste
This humble Kale cabbage salad is something that I make at least once a week now. I tasted it at a restaurant and as soon as I got home I wanted to make the dressing right away with clean eating, healthy ingredients I always carry at home. After a few adjustments, I was blown away. The dressing was actually BETTER than what I tasted at the restaurant! And if you hate kale, or it is just not your thing, you MUST give this recipe a try! If the dressing is too thick for you, add a tablespoon or two of some water. I made sure to perfect and balance every bite so that the mouth will ask for more. Lol
This salad is easy to prepare, light, clean and elegant, and indeed delicious and satisfying. Perfect for Shabbat day or Friday night or really any day of the week!
Combine kale, cabbage, and onion in a bowl and set aside.
Prepare the dressing by whisking all the ingredients together until well incorporated.
Dress the salad with part of the dressing, sprinkle the cashews on top, add the avocado in the middle and sprinkle some black sesame seeds to garnish.
