Who said that waffles are only for Sundays? We all face those days when kids come from school and dinner is not even close to being ready! Breaking your head what to make? No worries, I’ve got you covered! These waffles are ready to whip in no time. Really easy and fast. Healthy, delicious, filling and just perfect in so many ways. Add lots of fruits of your choice. I usually do banana and strawberries with a drizzle of pure maple syrup and a sprinkle of chocolate chips. I double quantities because one batch is for my kids and me and the other is for my husband! Just saying!-)
1.5 cups white spelt flour
2 tsp baking powder
Pinch of salt
2 Tbsp coconut sugar
1.5 cups almond milk
1 flax egg (1 tbsp flax+ 3 tbsp boiling water)
2 tbsp coconut oil
Instructions:
1). Make the flax egg: Combine 1 tbsp flax meal with 3 tablespoons hot water. Mix and set aside for 5 minutes.
2). Then Mix dry ingredients in a wide bowl.
3) Mix wet ingredients in another bowl.
4). Combine the wet, dry and flax egg and mix well.
5). Spray a thin coat of oil and pour ¾ cup in a preheated waffle machine. Take out when ready.
6). Top with your favorite fruits, some maple syrup, chocolate and enjoy.
No need for oil after the first waffle!
