Best Passover Honey Ginger Salmon

One of the beautiful things about Passover is that: On the one hand, we come across a limitation of ingredients which is hard, and on the other hand, we are forced to use our creativity and imagination which yields stunning results that feature the real beauty of SIMPLICITY. This salmon recipe is easy and absolutely packed with flavors. Gotta give it a try! And don’t forget to let me know how it was.

Ingredients:

  • One salmon filet, skin removed (about 2.5 lbs total)
  • 1/3 – 1/2 cup honey
  • 4 cloves minced garlic
  • 1 Tbsp minced fresh ginger
  • 1/2 tsp salt
  • 1 tbsp fresh lemon juice
  • 2 Tbsp olive oil

Instructions:

Preheat oven to 425 F.

1). In a bowl mix all the sauce ingredients: honey, garlic, ginger, salt, lemon, and olive oil.

2). Pat dry the salmon and place on a baking sheet lined with parchment paper.

3). Pour the sauce over and let sit for 5 minutes.

4). Place in the oven and bake (uncovered) for 20-22 minutes. (you can take it out after 18 minutes and check for doneness).

Enjoy!

Note: If you do not use garlic during Passover try to swap for sauteed onions or finely chopped shallots. (let me know if it is good)
