I can NOT stress enough how much I love love love this amazing recipe!
As much as avocados are healthy and loaded with vitamins and good-for-you fats, eating too much, like in everything else in life, can go against you.
That is why this edamame avocado recipe is going to change your life so much. No-one will know that eating this yummy guac is actually filling and guilt-free. Totally a crowd-pleaser because you get a huge quantity of yummy guacamole about 4 cups by combining all these ingredients together.

1). Place the frozen edamame in a microwave-safe bowl and add 1/4 cup water. Heat in the microwave for 10 minutes. Allow cooling for a couple of minutes. Remove all the water, and place in a food processor.  Add 2 cloves garlic, 2 tbsp water, and blitz until very smooth. (Add little splashes of water if the paste is too dry to move smoothly) .Open the lid and scrape the edges to the bottom as much as needed. Once the edamames are well blended and smooth,  set it aside. 

2). Cut open the avocados, scoop into a bowl, and mash into chunks. Add the edamame paste to the bowl as well. Add all the other components: Diced tomato, red onion, green onion, cilantro, lemon, a pinch of raw sugar, salt and pepper, and, sliced jalapeno if desired. 

3). Mix everything well. Adjust your seasonings, and enjoy!

Note: To keep it as fresh as possible, place the guac in an airtight container and squeeze an additional 1/2 a lemon on top. This will prevent it from turning brown.
