Yields: 15 pancakes
• ½ cup almond flour
• 2 cups oat flour (you can grind your own oats in a blender)
• 1 tbsp baking powder (aluminum-free)
• Pinch of salt
• 3 tbsp pure maple syrup
• 1 ¾ -2 cups soy milk (or other plant milk)
• 1 tsp vanilla extract
• 1 tbsp apple cider vinegar
• 1rip banana, mashed
• 1/3 cup chocolate chips
This healthy pancake recipe is such a big hit at our house. I literally make it a few times a week! The ingredients are easy and available at all times. It takes so fast to serve to the table and everyone is happy and satisfied. It feels like eating a dessert for breakfast. I can’t wait for you to give it a try! 1). Combine all dry ingredients in a bowl. Almond flour, oat flour, baking powder, salt, and mix well.
2) Add the wet ingredients: Mash the banana in a bowl, add milk, maple, vanilla, vinegar, and mix.
3). Mix the dry and wet together with a whisk, and let sit for 5-7 minutes to allow the liquids to be absorbed.
4). While the batter is resting, heat up a good nonstick pan and add about 1 tsp of coconut oil.
5). Fold in the chocolate chips.
6). Use a big spoon or a ¼-1/3 measuring cup, scoop from the batter and place on the hot pan. Cook pancakes on medium heat for about 1 minute on each side. Flip only after you see a nice amount of bubbles.
7). Drizzle with pure maple syrup and some fresh bananas and enjoy.
