If you are looking for a healthy carb without feeling guilty about it, eat this! Sweet potatoes are so amazing for our body! They are very low in fat and high in beta-carotene, a source of vitamin C, A, B6-2-1, potassium, and fiber. They literally nourish our body and skin. Eating sweet potatoes with the skin on is way more beneficial than just the potato itself. It helps the digestive system and balances blood levels. To start my day right, I like to eat sweet potatoes for breakfast or brunch. Try this dish and enjoy a healthy, sweet, yummy and a very impressive way to serve this beyond valuable side-dish.
Preheat your oven to 420
1). Wash and clean potatoes and pat dry.
2). Using a sharp knife start slicing each potato, making sure to avoid cutting all the way to the bottom. A very helpful tip is to place wooden Bamboo Skewers on both sides of the potato. That step avoids the knife to go all the way down.
3). In a small bowl, combine and mix oil, garlic, rosemary, thyme, paprika, salt and pepper and brush on the potatoes.
4). Cover the tray and bake for 30 minutes.
5). Remove cover and continue until crisply, nice and golden brown, about 7-12 minutes.
