The Most Addictive Crunchy Date & Tahini Chocolate Balls

Long-time ago, these clean eating energy balls became a must-have in my house. Why? Because they are absolutely incredible! Guilt-free, packed with crunch, fiber, and protein. Can be eaten as a morning snack or on the go when you pick up the kids from school. I love watching my kids eat them and asking for more. These are full of healthy fats from the tahini and nuts and leave you full because of the fiber of oats. The cinnamon takes it to the next level and there is nothing not to love about it. Instructions

1). Place almonds and pecans in a food processor. Pulse about 10 times until you get nice crunchy medium size pieces. Not too small, and not too big.  Transfer to a bowl. Add the hemp seeds and set aside.

2).In the same food processor, place the dates, oats, cocoa powder and mix for about 2 minutes until a ball is formed.

3). Add the rest of the ingredients:  milk, tahini, cinnamon, vanilla, and maple syrup.

4). Using a spatula if needed, transfer the date mixture to the nuts bowl.

5). Using wet hands or even better with gloves, mix all the nuts into the date “dough”. Working it until all the nuts are really well incorporated.

6). Prepare a bowl with 1 cup of unsweetened coconut flakes and a little bowl of water in case you need to wet your hands.  Form round balls and roll into the flakes.

7). Place the balls in a container and place in the fridge up to 7 days or in the freezer up to 3 months.

8). For best absorption of vitamins and minerals, it is recommended to eat it along with a fruit.
